I am not a cook or a baker! I do not really like to do either, nor is it a talent I possess! So when I need to bring something small to a holiday function or I need to bake something for the family, it HAS TO BE super easy! And I mean, REALLY, REALLY easy! These 3 recipes are my go-to’s when the holiday time rolls around, or I when I want to impress my husband. 🙂
1- Mini Lemon Pies. This one is ridiculously easy and that is why I love it! If you have a lemon lover in your family make this for them and they will think you are the best baker ever! My husband loves lemon so I make these for him often.
-Jar of high quality lemon curd (I get mine at Trader Joe’s or Whole Foods) Make sure it is lemon curd and not lemon jelly or jam.
-Individual mini graham cracker crusts. These are on the baking aisle and come in a pack of 4. The are each in a little tin pan.
Unwrap the crusts, spoon the lemon curd in each, top with Cool Whip! Yeah, that is it. No joke! Little mini lemon pies just like that! If you want them to be a little stiffer put them in the refrigerator for 30 minutes before you serve them.
2- Stuffing Muffins. What is a holiday meal without the stuffing!? But sometimes the stuffing can get lost if you are also serving potatoes and/or sweet potatoes, and a casserole of some sort. This recipe is a perfect way to make sure the stuffing stays on the menu! First, it is way easy! Second, it is an ingenious way to serve stuffing!
-Box of Stove Top Stuffing (you need water and butter to make the stuffing)
-Muffin Tin (either greased or with paper cups)
-Optional: cube of cheese
Preheat oven to 450 degrees. Prepare the stuffing. Add the boxes recommended amount of water and butter to a microwave safe dish. Heat until it boils, stir in stuffing and let stand 2 minutes. Scoop the stuffing into each muffin tin space. Reduce heat to 425 degrees and bake for 15 minutes. Loosen the edges with a knife, tip the muffin tin over on a cooling rack and allow them to cool. Brush with a bit of melted butter while they are still warm if you wish.
3- Apple Pie Bites. Who doesn’t love apple pie!? These tasty little pie bites are the best and do not require you to make and roll dough!
-Roll of Pillsbury crescent rolls
-1/2 cup brown sugar, teaspoon each of: cinnamon, nutmeg, all spice
-1 bag green apple slices
-1 cup chopped pecans
-1 cup melted butter
Cover a cookie sheet with parchment paper and lay out the crescent rolls. Combine the brown sugar, cinnamon, nutmeg, and all spice in a small bowl. Spread the mixture on each roll. Add some chopped pecans on each roll. Next, place an apple slice (that has been dipped in melted butter) on the wide end of each crescent roll. You can leave the peeling on or take it off. Roll them up and bake for 10-12 minutes or until golden brown. Boom! Delicious apple pie bites! For extra yum, serve with a scoop of vanilla ice cream!!
And there you have it! Super easy and super good! Serve them at your holiday meals and when everyone thinks you spent forever baking just smile and nod! I won’t tell!! 🙂
